  • 12 ounces (4 cups) frozen, cooked, peeled and deveined medium shrimp
  • One teaspoon dark Oriental sesame oil
  • 1/4 teaspoon crushed red pepper
  • 1/2 cup chopped scallions
  • 1/3cup grated carrots
  • 4 lime wedges
  • 1/4 to 1/2 cup kimchi, chopped (optional)


  1. Bring water to a boil in a 3- to 4-quart pot. Break up noodles, add to the pot and cook 3 minutes, stirring occasionally, or until tender.
  2. Remove from heat. Immediately stir in shrimp, seasoning packets, oil and crushed pepper. Add Kimchi to the soup.  Let stand 1 minute. Sprinkle scallions and carrots over the top. Serve with lime wedges on the side.

Tips and techniques: 

The Kimchi is entirely optional. It’s an acquired taste and may not be available in all areas, consider adding regular cabbage. You could add bean sprouts, water chestnuts, peas, etc. You can garnish the top of the soup with a drizzle of fish sauce, sesame oil, or hot pepper oil.
