1. Zucchine Noodle With Vegetables And Soy Sauce Recipe


Ingredients: (4 servings)

  • 8 oz of rice noodles
  • 1/2 red sweet pepper
  • 2 carrots
  • 2 purple onions
  • 1/2 zucchini
  • 8 green asparagus
  • Water
  • 1 tbsp of honey
  • 2 tbsp. of soy sauce
  • Olive oil
  • Salt

Preparation:

Clean the vegetables. Cut the pepper, carrot and zucchini in batons, the onions in julienne and asparagus in three so they are all bite-size. Place 4 tbsp of oil in a baking pan, then add the vegetables, season them and let them fry. Once the vegetables are done, add a tbsp of soy sauce and another of honey and mix everything. 

Meanwhile, place plenty of water in a saucepan to cook the noodles. Once it begins boiling, add a little salt and add the noodles. Cook it for 4 minutes, always stirring to make them as loose as possible. Strain and soak them in cold water to stop cooking them.

Mix the vegetables with the rice noodles and add another tbsp of soy sauce. Serve in a full tray. Tip: rice noodles can be bought in the supermarket in the imported products sections.

2. Black Noodle Recipe


Ingredients: (4 servings)

  • 1 lb of black noodles
  • 1 lb of squid
  • 1 onion
  • 4 garlic cloves
  • 1 tomato
  • 1 l of fish broth
  • Olive oil
  • Salt

Preparation:

Mince the onion and slice the garlic. Poach them in a saucepan with oil. As soon as it begins changing colour, add the peeled and minced tomato—Fry briefly over the strong flame. Clean the squid chop them and add them to the pan. Mix well and pour the broth. Add the noodles and season them. Cook them for 4 minutes. Decorate with a sprig of parsley.

To clean the squid, remove the hyaline cartilage that runs around the body, separate the head from the body by simply pulling it off and get rid of the mouth. Wash the tentacles and body and remove the skin that covers them under a running faucet of cold water.


3. Veal Medallions With Fresh Morels, Carrots, Peas And Noodles Recipe

 

Ingredients : (4 servings)

  • 2 oz of veal medallions per serving
  • Salt
  • Black pepper, morels
  • Shallots
  • Cream For the noodles:
  • 2 lbs of potatoes
  • 2 eggs
  • 5 oz of flour
  • 2 oz of butter
  • Salt
  • Nutmeg Accompaniment:
  • Glazed carrots
  • Glazed peas

Preparation: 

Season the medallions with salt and pepper and roast them in butter, set them aside. Wash the morels and fry them lightly with minced shallots and butter. Add the cream and cook until they are soft. Spread this on the veal medallions. Serve with a carrot, glazed peas and noodles accompaniment.

Noodles: boil the potatoes, strain them and pass them through the potato masher, add salt and nutmeg, allow cooling. Beat the eggs with the yolks and add them to the potatoes along with the flour. Mix everything and make small rolls about 3 inches long. Cook them in salty water for 3 minutes and then fry them in a pan with butter.
